You did a nice job with those, they look great. How did you serve them, I mean with what else? When the pandemic started I got a little more ambitious with cooking and had sort of a recipe bucket list, of relatively simple things anyway. Chicken Parmesan was #1. I had never made fried chicken either.

Chicken cutlets are the most underrated food. Chicken parm is my #1 favorite meal.

I always serve Chicken cutlets with egg noodles + corn. It's just an unbeatable combination.

And the next day if you have any leftover, you can make a chicken cutlet sub with mayo, lettuce & tomato.

This dinner was just a free for all, didn't really plan it out much so we just served it with some applesauce and the wife heated up some frozen veggies. The trick that I use for these is that while most people use an Eggs, Flour, and Breadcrumbs technique, I skip the Flour and only do Eggs with both Panko and Regular Breadcrumbs, as well as some Paprika and Italian Seasoning. Without the Flour it allows the coating to stick to the chicken better. At the end, I simply sprinkle some salt onto the chicken once its off the pan as it gets absorbed into the chicken, and add some lemon juice for a nice flavor.

Devilled Chicken, yellow rice, and Brinjal Moju (pickled eggplant) from the Sri Lankan restaurant across the river. Yummy, but it obviously does not travel well in those modern paper-based takeout containers.....

You would need a lot of that sauce to make those sawdust and cornstarch vegan burgers palatable.

1/2 of a steak & kidney pie and a sausage roll from Rogue Pies, horseradish puréed cauliflower and braised broccolini w/pepper flakes. Local Syrah to wash it down with.

Wife got the other half of the pie, dammit.
