We’ve got family round for homemade pizza tonight, and I’m rather excited. I made a sourdough starter about 10 days ago, and have been feeding it daily, so the day has finally come.

Yesterday, I made the dough, needed it by hand then let it prove overnight. I’ve just knocked it back and divided into equal balls, where they’ll sit in the fridge until mid afternoon. I’ll get them up to room temperature for about an hour, then it’s all systems go.

All of the toppings are from an Italian deli in town, the cheese is a Fior di Latte (Napoli cut), which shouldn’t leak a load of water out when cooking, I’ve got thick cut pepperoni, cubed pancetta and authentic Italian sausage.

Homemade garlic bread, followed by a mixture of pizzas. The gym doesn’t know what hit it this week!
