i did the same on a Golf GTE with no side effects.
It seems to me that the bleeding process is just there to speed up dealer coolant changes and avoid customers complaining about low coolant level which will happen if you don't use it.
If you are happy to check it for a day or so after refilling, then you know what to expect.

problem for me is I've been topping up coolant but it disappears but there is no leak or anything.
it drops to minimum level but water temperature is still stable at 105.
