Almond paste (marzipan)

For the Stollen.

Almond flour
Honey
Corn syrup
Sugar
Water
Almond extract

Cook sugar and water to 244F, then pour in a thin stream into almond flour on stand mixer using paddle attachment. Add a few drops of almond extract then mix for 5 minutes. Form into a log and wrap tightly with plastic. Can be used for anything that calls for almond paste. This is not, however, decorating marzipan and can not be formed into flowers or decorations. Decorating marzipan has a higher sugar content and lower almond content.
