I almost always wonder the same thing, when I go beyond "accurate" or "realistic". The effect is often very positive and striking and non-Photoshop people just see it as a beautiful image. In that context, I think it's fine. Still, if for instance, you Posterize everything, then it gets to be too much. Sometimes I'll put the basic image with moderate enhancements in a presentation, followed by the dramatic alteration, just for people to see.

Almost all of my images are altered to some degree, even if it's only what DxO's Optic Pro does in the RAW conversion. I keep all those base images as DNG (digital negatives) so that I can get back to them if I ever need to. When I really start to get carried away and I'm tempted to keep a seriously altered image, I'll put it in a separate file. That files starting to grow a lot and I'll soon need sub files, but that's what I'm doing now.
