This dinner was just a free for all, didn't really plan it out much so we just served it with some applesauce and the wife heated up some frozen veggies. The trick that I use for these is that while most people use an Eggs, Flour, and Breadcrumbs technique, I skip the Flour and only do Eggs with both Panko and Regular Breadcrumbs, as well as some Paprika and Italian Seasoning. Without the Flour it allows the coating to stick to the chicken better. At the end, I simply sprinkle some salt onto the chicken once its off the pan as it gets absorbed into the chicken, and add some lemon juice for a nice flavor.
