This whole 7 degrees stuff is a bit much unless you are absolutely pushing the car to the limit...you won't notice a difference. For the last 15 years...I change to winters literally the day it snows...so many days of below 7 degrees before that...and switch at the earliest day I can back to summers as I hate soft sidewall tires...again...never had an issue.
But it's comfort thing so if you feel like you need to wait a bit longer than definitely wait a bit til you are comfortable switching back to summers. Cheers, Rui.
