DOT 5.1 is nice, and there are also some good DOT 4 fluids. There is quite a lot of difference in price and specs inside these groups. Go for one with rather high boiling point. Last time I checked, Castrol SRF was considered the best, but it is ridiculously expensive, so I would not bother buying that one. If you overheat the brakes often (track days), it is better to replace the fluid more often than using very expensive fluid.
